Shake all ingredients vigorously with ice (add egg white if desired for froth). Strain into a coupe glass and garnish with an apple slice and a sprinkle of cinnamon.
Char a grapefruit slice and squeeze the juice. Combine juice, vodka, and rosemary syrup in a shaker with ice. Shake and strain into a glass over ice, top with tonic water. Garnish with a charred grapefruit slice and a sprig of rosemary.
Muddle a few thyme leaves, then add vodka, Oregon blackberry puree, thyme syrup, and lemon juice to a shaker with ice. Shake and strain into a glass over ice, top with soda water. Garnish with blackberries and a thyme sprig.
Shake 2oz vodka, 1oz Monin lavender syrup, and 2oz lemon juice with ice. Strain into a highball glass over ice and top with soda water. Garnish with a lemon twist and a sprig of lavender.
